Cuisine of Uttar Pradesh


The Cuisine of UP has a large variety of dishes. The cuisine consists of both vegetarian and non-vegetarian dishes of different varieties. Being a large state, the cuisine of UP share lot of dishes and recipes.

As wheat is the staple food of the state, breads are very significant. Popular breads include tandoori naan (naan baked in a tandoor), tandoori roti, kulcha, taftan, sheermal, Rumali Roti, Paratha, millet (millet flour flatbread), and lachha paratha.

Some Common Dishes

Aaloo Paratha , Baati Chokka { Litti} , Bariya , Boondi, Boti Kabab, Chaat , Chicken Biryani, Chilla , Chole Bhature , Daal Bhari Puri ,Dal Makhani is fried with Butter , Dum Bhindi , Egg Karry , Kadi Chawal , Kadi Pakoda , Korma , Lapsi , Kofta , Dum Aaloo etc .

Some Traditional Desserts

Balushahi , Barfi , Chhena , Gajar ka Halwa , Gond ke Laddu , Gujia , Gulab Jamun , Halva , Imarti, Jalebi , Kaju Katli , Kheer , Kulfi , Kalakand, Chandra Kala etc.

Apart from native cuisine, there are some other foods specialities as per region wise.

Banarasi food

Purity, simplicity and great refinement were the hallmark of Banarasi cuisine. Sweets are the real forte of Banaras. Delicious kachauris, jalebis, samosa and a range of street fare which of course includes offerings from the local chhatwallah will win the heart of every visitor.

Awadhi food

Awadh, the heart of the Nawabi culture, paid tribute to all tastes. The Awadh region has been greatly influenced by Mughal cooking techniques, Some of famous dishes such as kebabs, kormas, biryanis, kaliyas, nahari-kulchas, zarda, sheermal, rumali rotis, and warqi parathas. The richness of Awadh cuisine lies not only in the variety of cuisine but also in the ingredients used like mutton, paneer, and rich spices, which include cardamom and saffron. Kebabs are an integral part of Awadhi. Lucknow is proud of its Kebabs. There are several varieties of popular kebabs in Awadhi cuisine viz. Kakori Kebabs, Galawat ke Kebabs, Shami Kebabs, Boti Kebabs, Patili-ke-Kebabs, Ghutwa Kebabs and Seekh Kebabs are among the known varieties.
